Not Your Mommy’s Umami

Brewed for Ramen Attack 2015, this beer highlights umami flavor notes, the savory flavor and sense of depth found in ramen. The beer uses a Belgian-style saison as its base, then adds Shiitake mushrooms and Kombu (a form of seaweed often used in Japanese cuisine). This combination was aged together to yield a herbal, peppery base layered with umami notes.
